Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 1 Cup Pumpkin Canned or roasted
  • 1 Cup Sugar White
  • 1/2 Cup Oil Vegetable or Canola
  • 1 Egg
  • 2 Cups Flour All Purpose
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon ground
  • 1/2 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Milk 2%
  • 1 Tbsp Vanilla Extract
  • 2 Cups Chocolate Chips Semi-Sweet or Dark
  • 1/2 Cup Walnuts Chopped (Optional)

Instructions
 

  • Preheat oven to 350F.
  • Combine pumpkin, sugar, oil, and egg.
  • In a separate bowl, sift together flour, baking powder, cinnamon, and salt.
  • Dissolve baking soda in milk and stir in with wet ingredients.
  • Gradually mix dry ingredients into wet until thoroughly combined.
  • Add vanilla, chocolate chips and nuts (if using them) and fold until evenly distributed.
  • Drop by spoonful onto cookie sheet with parchment paper.
  • Bake for 8-12 mins or until lightly browned and firm.
  • Let cool fully before tasting.
