Pumpkin Chocolate Chip Cookies
Ingredients
- 1 Cup Pumpkin Canned or roasted
- 1 Cup Sugar White
- 1/2 Cup Oil Vegetable or Canola
- 1 Egg
- 2 Cups Flour All Purpose
- 2 tsp Baking Powder
- 2 tsp Cinnamon ground
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 1 tsp Milk 2%
- 1 Tbsp Vanilla Extract
- 2 Cups Chocolate Chips Semi-Sweet or Dark
- 1/2 Cup Walnuts Chopped (Optional)
Instructions
- Preheat oven to 350F.
- Combine pumpkin, sugar, oil, and egg.
- In a separate bowl, sift together flour, baking powder, cinnamon, and salt.
- Dissolve baking soda in milk and stir in with wet ingredients.
- Gradually mix dry ingredients into wet until thoroughly combined.
- Add vanilla, chocolate chips and nuts (if using them) and fold until evenly distributed.
- Drop by spoonful onto cookie sheet with parchment paper.
- Bake for 8-12 mins or until lightly browned and firm.
- Let cool fully before tasting.
