  • 1 Turkey 7-9 Kg
  • 125 ml Seasoning
  • 15 ml Oil

Thaw Turkey

  • Thaw turkey over 2-3 days in a fridge or cooler with ice packs

Prepare and Season Turkey

  • Quarter turkey. If you want a good video, check out "That Dude Can Cook" on YouTube
  • Mix oil with seasoning if using fine powders (paprika, onion powder, etc). If you have fresh rosemary available, follow the recipe "That Dude Can Cook" mentions in his video for Rosemary Salt.
  • Apply seasoning slurry to Turkey parts. Let rest in fridge for 1 hour to "Quick Dry Brine".

Smoke Turkey

  • Set Pellet Grill to 180F or Low Smoke mode
  • Place turkey breasts and wings on one sheet pan, and legs on another.
  • Place sheet pans into Pellet Grill and insert meat probe to thickest part of a breast.
  • Smoke on low for 1 hour. Your breast should be around 75-80F.
  • Raise heat on grill to 400F.
  • Cook until breast reaches 145-155F.
  • Remove breasts and wings from grill, cover and rest. It will carry over cook the rest of the way without drying out.
  • Continue to smoke legs until a temperature of 205F is reached. This will break down the collagen to gelatin and give you a fall apart texture, similar to brisket.
  • Take legs out and let rest.
