
Tony's Scotch Eggs
Discovered at a party in 1974! Modified to perfection over the intervening years... There were a real favourite, that is, until my bypass surgery!
Ingredients
- 15 Eggs Small
- 1.125 Kg Quality Lean Sausage Meat
- To Taste Garlic
- To Taste Spices Thyme, Coriander, Marjoram, Pepper as desired
- 2 Cups Bread or cornflake crumbs
Instructions
- Hard boil and peel 12 eggs.
- Preheat oven to 350F.
- Mix sausage meat with 1 egg, garlic, and spices to taste. (Remember, sausage is already spiced so go easy on 1st try and adjust next time!)
- Cover each boiled egg with meat.
- Beat remaining 2 eggs.
- Coat with beaten eggs, roll in crumbs and place on a baking sheet lined with parchment paper.
- Bake in oven for 30 mins then turn.
- Continue cooking for 15-30 more minutes, or until deepest part of sausage reaches 165F.
