Preheat oven to 350F
Cream sugar and eggs
Add pineapple and vanilla and beat until smooth
In a separate bowl, combine flour mix, baking soda, baking powder, and salt
Add dry ingredients to wet ones and beat until blended
Fold in carrots and nuts
Lightly grease and then pour into 2x round 9" cake pans, 1x 9x13" pan, or 36 Muffin Cups
Bake for 45-55 mins or until center has set
Allow cake to cool after baking
While cooling, combine and beat cream cheese, butter, vanilla and icing sugar to make cream cheese icing
Ice cake as desired.
