Fruit Ingredients
- 900 g Seeded Raisins
- 900 g Dried Currants
- 900 g Seedless Raisins
- 450 g Glace Cherries
- 450 g Almonds
- 450 g Mixed Peel
- 19 oz Crushed Pineapple
Cake Inhgredients
- 450 g Butter Unsalted
- 200 g White Sugar 1 Cup
- 12 Eggs
- 15 ml Lemon Juice
- 1 Lemon Zest
- 30 ml Vanilla Extract
- 4 g Baking Soda
- 625 g All Purpose Flour 5 Cups
- 4 g Cream of Tartar 1 tsp
- 4 g Ginger 1 tsp
- 4 g Cloves 1 tsp
- 4 g Cinnamon 1 tsp
Instructions
- Mix fruit ingredients
- Let sit overnight.
- Combine cake ingredients with fruit
- Preheat oven to 300F.
- Line pans with parchment (3 thick).
- Fill pans 2/3 of the way.
- Bake 2-4 hours, or until tester comes out clean (205F-209F internal temperature)
